If there is one cake that is suitable for every occasion, French Butter Cake is the one. With easy instructions and simple ingredients, this cake can be thrown together at the last minute with a whisk and a bowl. It's as basic as a White Cake and could almost be overlooked, if not for the butter glaze. This glaze is like a layer of gold that envelopes this cake, putting it into a class of its own.
Cake Ingredients:
½ cup plain greek yogurt
1 cup granulated sugar
3 large eggs
2 tsp vanilla extract
¼ tsp almond extract
½ Tbsp lemon zest
1½ cups all-purpose flour
2 tsp baking powder
½ tsp salt
½ cup safflower oil
Instructions:
Preheat oven to 350º F
Spray an 8" cake pan with oil, add an 8" disc of parchment paper to the bottom and spray lightly. Set aside.
In a large bowl, combine the first 6 (wet) ingredients. Whisk by hand until evenly blended.
In a separate bowl combine the (dry) baking powder, salt and flour. Gradually whisk the dry ingredients in to the wet, just until blended.
Add the oil to your batter and stir well. Pour into the prepared pan. (Leave the parchment paper in place. It will give the top of the cake a clean edge.) Bake for 30-40 mins, until a toothpick comes out clean. Remove from the oven and prepare the glaze, while the cake cools.
Glaze Ingredients:
⅓ cup granulated sugar
3 Tbsp salted butter,
1½ Tbsp water
1 tsp vanilla extract
⅛ tsp almond extract
Instructions:
Combine all ingredients into a small saucepan and cook over medium heat. Stir frequently until butter melts and sugar dissolves, being careful not to let it reach a boil.
Brush some glaze over the top of the cake while it is still in the pan, and let it soak in. Then flip the cake out of the pan, remove the parchment paper and glaze the rest of the cake on the top and sides, so that the entire cake has been covered. Continue to do this until all of the glaze has been used up.
Let cool, then sprinkle with icing sugar.
